For one weekend in June, Melbourne restaurant Doju takes over the kitchen at Black Cow Bistro.
Led by Chef Mika Chae, this collaboration brings a thoughtful, produce-driven interpretation of Korean cuisine to Tasmania — grounded in tradition, but expressed with precision and restraint.
The Takeover
At Doju, Mika’s cooking is known for its quiet confidence: an approach shaped by fermentation, balance, and the natural character of ingredients rather than overt complexity.
For this special weekend, that philosophy meets Tasmania’s exceptional produce — grass-fed beef, pristine seafood, and cool-climate vegetables — reimagined through a distinctly Korean lens.
Expect smoke, fire, banchan, jeotgal, and ssam, layered with the depth and clarity that define Doju’s cooking.
