About Municipal

Founded in 2014 by winemaker and sake maker Matt Froude, Municipal is dedicated to crafting wines and sakes that honour variety, place and season. From cool-climate Riesling, Savagnin and Tempranillo, to Aiyama rice from Japan’s “Love Mountain,” their bottles reflect authenticity and a deep respect for nature. Light, fresh and textured, Municipal’s creations are made to be enjoyed with food — balancing elegance, complexity, and a quiet sense of curiosity.


On the Night

From the cold brine and brightness of Streaky Bay oysters, to scallop and wagyu rib enriched with doenjang beurre blanc, every dish was a dialogue of depth and season. Rabbit tteokbokki found new expression under fresh black truffle, while dry-aged duck sang with the sweet tang of winter plum jam.

Each course was paired with Municipal’s rare sake and cool-climate wines — crafted with patience, respect for flavour, and a quiet rebellion that resonates deeply with Doju’s own philosophy.
