Earlier this year, Chef Mika travelled to Sydney to cook alongside Alex Wong at Lana for their first collaboration together. This August, the story continues — with Alex making the journey to Melbourne for an evening at Doju.
For one night only, the two chefs come together once again to create a shared menu inspired by tradition, shaped by different cultures, and built around seasonal produce, thoughtful technique, and the traditions that continue to inspire both chefs.
About Alex
Alex Wong is Executive Chef of Hinchcliff House, overseeing Lana, Grana and the group's culinary program in Sydney.
Alex's cooking has always been shaped by curiosity. After years leading some of Sydney's most celebrated Italian kitchens, he's now looking closer to home, reconnecting with his Chinese and Vietnamese heritage through Rue de Saigon — a series of collaborative pop-up dinners inspired by the southern Vietnamese cooking of his mother and grandmother, reinterpreted through a French and European lens.

Together, Alex and Mika have created a one-night-only menu that reflects their individual journeys while finding common ground through seasonal Australian produce, thoughtful technique, and a shared respect for heritage.
